Chanterelle Mushroom Stuffing

Makes 1 (9- × 13-inch/23 × 33 cm) casserole dish (enough to stuff an average turkey)

4 cups (1 L) sliced chanterelles

½ cup (125 mL) butter

2 celery stalks or fennel, diced

⅓ cup (80 mL) minced green onion

2 garlic cloves, chopped fine

3 sage leaves, chopped fine

1¼ cup (60 mL) parsley, diced fine

1 Tbsp (15 mL) thyme leaves

Salt and pepper

1 cup (250 mL) Thompson or golden raisins or chopped apples

1 small loaf of sourdough bread, chopped into ¾-inch (2 cm) cubes

¼ cup (60 mL) olive oil

1–3 cups (250–750 mL) chicken or vegetable stock

9 very thin slices of de-seeded lemon or preserved lemons (page 106)

3 Tbsp (45 mL) chopped green onions, for topping
